Greek Style Baked Cod
4-6 cod fillets, 180-200g each (grouper is a suitable substitute)
1/4 cup parsley leaves, washed and chopped
5 tbs lemon juice
5 tbs olive oil
2 tbs butter, melted
5 garlic cloves
1/3 cup plain flour
1 tsp ground coriander
3/4 tsp sweet paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper
Preheat the oven to 200 degrees celsius (fan-forced).
Mix the lemon juice, olive oil and melted butter in a bowl, stir to combine and set aside.
Mix the flour, spices, salt and pepper in a different bowl.
Pat the fish dry. Dip the fish in the lemon sauce, then dip it into the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
Heat 2 tsp olive oil in a cast iron skillet over medium-high heat. The oil should be shimmering but not smoking. Add the fish and sear on each side but do not fully cook, about 2-3 minutes per side. Remove the skillet from the heat.
Add the garlic to the remaining butter sauce and stir to combine. Drizzle the sauce over the fish.
Bake in the preheated oven until the fish flakes easily with a fork (about 10 minutes).
Remove from the heat and transfer to a plate and cover with foil and leave to sit for 5 minutes.
Transfer the fish onto a serving plat and sprinkle with parsley leaves.
