Sautéed Mushrooms with Garlic
Buy or find
Button mushrooms, 450g
Soy sauce, 1 tbs
Olive oil, 2 tbs
Unsalted butter, 2 tbs
White wine, 1/4 cup
Fresh thyme, 1 spring or a pinch of dried thyme
Garlic, 2 cloves, peeled and crushed
Chives for garnish

Clean mushrooms by wiping with a paper towel or mushroom brush.
Slice the mushrooms into thick slices.
Add butter and oil to a frying pan and heat over medium high heat.
Add the soy sauce and stir.
Add the mushrooms to the pan and stir to combine with the butter and oil. Do not stir to allow to cook for about 4-5 minutes without disturbing the mushrooms to encourage them to brown on one side.
Add white wine and allow to evaporate.
Add garlic and thyme.
Continue cooking an additional 3-4 minutes stirring occasionally until cooked.
Season with salt and pepper to taste.
Serve as a side.
