Egg Salad
Buy or find
Eggs, 8
Mayonnaise, 1/4 cup
Dill leaves, 1/4 cup, washed, chopped
Chives, 2 tbs
Pickles, sliced and diced, 1 or 2 tsp
White onion, diced, 2 tsp
Dijon mustard, 1 tbs
Salt, 1/2 tsp
Freshly ground black pepper to taste
Do
Boil eggs until hard boiled. (If you add the eggs to boiling water, they are easier to peel.)
Combine and mix mayonnaise, dill, chives, dijon, white onion, pickles, salt and pepper.
Leave the eggs to cool, once cooked.
Peel and chop the eggs and add the to a serving bowl.
Add mayonnaise, dill, chives, dijon, salt and pepper.
Mix well.
You can increase the dressing to egg ratio for a richer salad.
Add some spring onion for extra bite.
