Improved Minestrone
Buy or find
Carrot, 2, diced
Celery, 2 sticks, washed and diced
Brown onion, 1, diced
Potato, diced and boiled
Passata, 1 400ml bottle
Italian herbs, 3/4 tsp
Chicken stock, 800ml
Zucchini, 1 diced
Kale, a handful, finely chopped
Do
Fry onion celery and carrot in oil on medium heat until softened, cook well at this stage.
Add Italian herbs.
Add passata and stock.
Add kale and zucchini and simmer.
Add potato and heat until warmed through.
Serve with olive garden bread sticks.
