Ina Garten Meatloaf
Beef mince, 500g
Brown onion, 1, diced
Olive oil, 1 tbs
Fresh Thyme, 1 tbs
Kosher Salt
Freshly ground black pepper
1/6 cup chicken stock
Egg, 1
Breadcrumbs, 1/4 cup
Tomato paste, 1/2 tbs
Tomate Sauce, to cover
Preheat oven to 195 degrees celsius.
Fry onion and thyme and salt and pepper in oil on medium high heat until translucent, not brown.
Add tomato paste and chicken stock, allow to cool slightly.
Combine the onion mixture with the beef, breadcrumbs and egg.
Combine without compacting, a fork is a good tool to use to start this process, then use your hands but don’t compact into a tight wad of ingredients.
Line baking tray with baking paper, tip the beef mixture onto the tray and shape into a loaf.
Smear the top with tomato sauce (and chilli sauce if you like).
Bake for 45 minutes or until cooked.
Great on sandwiches.
