Lemon Potatoes
4 cloves garlic, peeled and roughly chopped
1/2 cup lemon juice
1/3 cup olive oil
1/4 cup American mustard
2 tsp dried oregano
1 tsp kosher salt
freshly ground black pepper
1 kg potatoes, desiree work well, chopped into 3cm thick wedges (3cm at thickest edge of the wedge). You don’t have to peel the potatoes unless you are using brushed potatoes.
1/2 cup water
Preheat oven to 200 degrees celsius (fan-forced).
Combine all ingredients except potatoes and water in a large bowl and stir to combine.
Add the potatoes to the bowl and stir to combine.
Place in roasting pan.
Pour over the water and cover the pan with foil.
Place the roasting pan in the oven and roast for 1 hour. Remove the foil and roast for another 15 -20 minutes.
Try this plain with just oil and salt, leave out the mustard, oregano, lemon juice and garlic. Add slightly less oil when doing this.
