Mango Vinaigrette
1 cup (165g) ripe mango, cut into medium pieces
2 tbs rice wine vinegar
1 tbs white vinegar
4-5 tbs extra virgin olive oil
2 tbs freshly squeezed orange juice
1 pinch salt
1 pinch sugar
4 tbs water
Combine all ingredients in a vita mix or food processor and blend until smooth.
Drizzle over salad leaves.
Try this with peach instead of mango. You will need 2 peaches for each mango replaced. Frozen fruit also works.
