Masala Dosa Filling (Potato)

400g potatoes, boiled and peeled

2 tbs ghee or butter

1 tsp brown mustard seeds

1/2 tsp fenugreek seeds

10 curry leaves

1 white onion, finely diced

2 tsp ground tumeric

1/2 tsp chillie powder

1 tsp salt

3 green chillies, finely chopped

3 tbs moong dhal, cooked according to the packet instructions

mash the potatoes roughly so they retain an uneven texture - they should not be smooth.

heat the ghee or butter in a frying pan and fry the mustard seeds and fenugreek seeds over a medium heat until they start to pop.

add the curry leaves and cook for a few seconds until fragrant, then add the onion and stir to combine.

increase heat to high and fry until the onion has softened and is starting to colour.

add the turmeric, chilli powder, salt and green chilli and stir to combine.

add the potato and moong dhal and toss over heat until the potato is coated with the onion spice mix.

serve with sambar and dosa pancakes or naan.
