Potato Wedges Roasted with Wine
1 kg desiree potatoes, any roasting potato works
1 tbs olive oil
1 tbs grapeseed oil
1/2 cup dry white wine
sea salt or kosher salt and ground black pepper
a few sprigs of rosemary
30 butter
preheat oven to 200 degrees celsius.
scrub the potatoes if necessary
peel potato or leave unpeeled, the choice is yours.
halve the potatoes and cut into thick wedges.
towel-dry the potatoes, using a tea towel of paper towel
place on a large roasting tray.
drizzle with olive oil and grapeseed oil and wine.
season generously with salt and pepper.
scatter the rosemary sprigs, toss well and dot the potatoes with butter.
bake for about 1 hour and 15 minutes, turning potatoes frequently until they are golden and crunchy.
