Wild Rice Salad

2/3 cup wild rice, cooked according to packet instructions

1/2 cup basmati, cooked according to packet instructions

1 cup dried cranberries, chopped

1/4 cup flaked almonds, toasted

2 green onions, finely sliced

1/2 cup fresh coriander leaves, washed and roughly chopped

1 tsp ginger, grated

1/2 cup orange juice

1 tbs olive oil

Combine rices together

Add cranberries, almonds, onion and coriander.

Toss to combine.

Combine orange juice, ginger and oil in a jar with a lid, shake to combine.

Pour dressing over the salad and toss.

This works very well with felafel, avocado, hummus and chilli on lebanese bread.

I am very careful with the amount of dressing and add half the full amount of dressing and taste test before adding the remainder.
