Thyme and Garlic Quinoa Patties

 2.5 cups cooked quinoa

5 organic eggs

1/2 cups finely grated parmesan cheese

3 sourdough bread slices, processed into breadcrumbs using a food processor

1/4 cup chives, finely chopped

2 garlic cloves, crushed

1 red onion, finely diced

1 tbs fresh thyme, finley chopped

1 tsp sweet paprika

salt to taste

neutral-tasting oil, grapeseed works

place all ingredients, except the oil into a large bowl and mix well with a large spoon until well combined.

scoop some mixture in the palm of your hands to shape a patty approximately 5 cm in diameter and 1 cm thick. the size can vary, the 1 cm thickness is important.

heat 1 tbs of oil in a large frying pan on medium heat.\

gently place 4-5 patties into the pan and shallow-fry, cooking for 2 minutes before gently flipping and frying the other side for roughly 2 mimutes.

repeat until all of the patties are cooked.

these also work with tabouli, potato salad, homous and avocado on lebanese bread or sourdough.

these work served in a roll with avocado, lettuce, italian tomato sauce or green goddess sauce.
