Pecan and Orange Salad
750g cooked rice, I use a combination of brown rice and jasmine, cooked separately of course.
1/3 cup orange juice
1/3 cup olive oil
1 garlic clove, peeled and crushed
1 red onion, sliced thinly and macerated in lime juice for 30 minutes at least
60g baby rocket
3 oranges, peeled and semgented
1/2 cup pecans, toasted
chilli of some sort, dried or fresh, optional
Combine orange juice, oil and garlic in a screw-top jar and shake to combine.
Drain onion in a sieve.
Add rocket, onion, orange segments, pecans and rice to a bowl. Rice should be at room temperature.
Drizzle dressing and toss to combine.
