Simple Corn Salsa

2 corn cobs, peeled, washed and corn kernels sliced from the cob

2 spring onions, washed and white part thinly sliced

2 tsp white wine vinegar

1 tbs grape-seed oil

Place corn in a frying pan with oil.

Cook corn on high heat with a lid on the frying pan for 4-5 minutes or until lightly charred. You can cook longer for a more intense char-grilled flavour. Be careful not to over cook.

Remove the corn from the heat and combine with the spring onions.

Place corn and spring onions in a salsa bowl and add vinegar.

This works as part of a salad and works very well with avocado and diced tomato.
