Roasted Sweet Potato Wedges

Buy or find
Sweet potato, 2, medium, washed
Olive oil, for roasting
Thyme, Chicken stock powder, onion powder, garlic powder, salt and pepper

Preheat
oven to 180 degrees celsius.

Cut sweet potato into wedges by cutting the ends off , then halving down the centre lengthwise and cutting into thick wedges. I get four pieces per half. Leave the skin on.

Place the sweet potato onto a baking tray and sprinkle over herbs, seasonings and chicken stock powder.

Mix well with your hands to spread the flavourings around the sweet potatoes. You don’t want any of the flavourings to be on the pan as they will burn during the cooking process.

Place the tray in the oven and bake for 40 minutes undisturbed.

Remove from the oven. Leave the oven on.

Allow the sweet potatoes to rest out of the oven for 20 minutes or so.

Return the tray to the oven.

Bake for another 15-20 minutes.

This recipe also works for potato wedges. For potatoes, you may want to add rosemary and chilli flakes.
