The Best Chicken Sandwiches
2 cups bbq chicken, shredded
3/4 cup Helmann’s mayonnaise. Use what you have in the fridge but Hellman’s is great.
1-2 celery stalks, diced
1 handful dill, washed and finely sliced, in our family, a little bit of fresh dill goes a long way.
juice of 1/2 lemon
1 tbs dijon mustard
Combine the mustard, mayonnaise and lemon juice and whisk to combine.
Combine the chicken, pine nuts, celery and dill, mix to combine.
Pour the dressing over the chicken, mix again to combine.
Try this on buttered soft white damper rolls with shredded lettuce and finely sliced Lebanese cucumber.
This also works if you substitute or add boiled eggs (mashed) and or boiled diced potato or even tuna.
To make a sweeter dressing, use less lemon and dijon.
I sometimes make this with less dressing for a lighter filling.
Try this on M’Smen with avocado.
You might like to try this with the addition of 1/4 cup toasted pine nuts.
