Rumbledethumps - needs editing
900g potatoes, peeled and cut into small pieces for mashing
2 cups sharp cheddar, grated
1 brown onion, diced,
1/2 cabbage, shredded but still with some texture
25g butter
4 Spring onion, sliced finely
1 cup milk
Boil potatoes until knife goes through
Fry onion in butter and a little oil for 4-5 mins medium to sweat them, add salt during this process
Add cabbage, turn up heat and continue to fry until all well collapsed and slightly browning
Mash potatoes when cooked. After draining potatoes, return them to pan on heat to dry the potatoes out to make them fluffy make sure potatoes cooked in salt
Add spring onions to milk and simmer until infused.
Add the milk mixture to the masked potatoes.
Add 1/3 cabbage mix to and stir through
Add a little cabbage to the bottom of the baking dish (square brownie tin is the one for this)
Then half of the potato mix
Then half of remaining cabbage, add plenty of black pepper
Then generous amount of cheese
Then potato, add pepper again
Then cabbage
Then cheese.
Bake at 180 until cheese melted, you may want to grill to brown and crisp
