Tomato, Mushroom and Rocket Pizza Roll-ups

1 quantity pizza dough

3/4 cup easy italian tomato sauce

3/4 cup parmesan cheese, grated

1 cup button mushrooms, washed and finely sliced.

1 cup rocket leaves, washed

Preheat the oven to 200 degrees celsius.

Divide the dough in half and roll out each half into a square in shallow baking trays. Do this one half at a time.

Spread tomato sauce evenly over each base.

Sprinkle parmesan cheese over each base.

Add mushrooms to the middle of each square, if adding.

Fold each square into a roll by picking up two opposite sides and pulling them to meet in the middle. Stretch the dough at a little bit as you do this. Press the dough gently in the middle to seal.

Bake for 15 minutes or until brown and crisp.

Remove from the oven, slice, transfer to a serving plate and sprinkle over the parmesan and rocket.

Try this served with rocket drizzled with lemon juice salt and olive oil.

Try this without the mushroom and perhaps replaced with salami.

Try this with chopped marinated artichoke in addition to the mushroom.
