Za’atar roasted chickpeas with roasted cauliflower

1 serve of Za’atar roasted chickpeas
1/2 cauliflower, washed and broken into florets
1 tbs tahini
juice of 1 1/2 lemons
salt and olive oil to taste

Prepare the za’atar chickpeas as per recipe .

While the chickpeas are roasting, place the cauliflower on a baking tray and spray with olive oil. Bake for 30 minutes or until browned.

Leave all roasted ingredients to cool and place in a food processor with tahini, oil, salt and and lemon juice. Process until smooth and a little like hummus.

For this recipe, less za’atar spice mix is better than more.
