Zucchini Slice

6 eggs
1 cup self-raising flour
540g zucchini, grated
1 large onion, grated
200g rindless shortcut bacon, chopped or diced
1 cup grated cheddar cheese
a pinch of grated parmesan cheese, you may prefer more than a pinch
a pinch of grated mozzarella cheese, you may prefer more than a pinch
1/4 vegetable oil

Preheat oven to 170 degrees celsius (fan-forced).
Beat the eggs in a large bowl until well combined.
Add the flour and beat until smooth, then add the zucchini, onion, bacon, cheese and oil and stir to combine.
Grease and line a square baking dish with foil. Spray the foil with olive oil.
Pour the zucchini mixture into the prepared tin and bake in the oven for 30 - 35 minutes or until cooked through.
