Banana Pancakes

3/4 cup rolled oats
2 eggs
1 ripe banana
1 tsp baking soda
1 tbs vanilla extract
1/2 cup unsweetened almond milk

Place all of the ingredients in a blender and process until smooth and well combined.

Heat a medium frying pan on medium-high heat and spray the pan with olive oil spray.

Place 1/3 cup of the batter in the frying pan and cook for 3 minutes on each side, or until both sides are browned. You may need to turn down the heat if they are cooking too quickly.
