Easy Pancakes
2 eggs
1 3/4 cup milk
1 tsp vanilla extract
2 cups self-raising flour
1/3 cup caster sugar
unsalted butter for frying
maple syrup, peanut butter, choc chips and peanut butter choc chips to serve
Whisk eggs, milk and vanilla in a jug.
Combine sugar and flour in a large bowl, whisk to combine. (some people like to sift the flour but I hardly ever bother and don’t really notice the difference with this recipe).
Pour in the milk mixture and whisk until just combined. Don’t over mix.
Heat a large frying pan over medium heat. Add some butter and spread around the pan with baking paper.
Add 1/4 cup mixture per pancake and cook for 2 minutes or until bubbles start to appear on the surface.
Turn and cook for another 1-2 minutes, or until cooked through.
Transfer to a plate, cover loosely with foil. Repeat with the remaining mixture.
Regrease the pan as above, between batches.
Try this served with maple syrup, choc bits, peanut butter or any combination of these.
Try this with choc bits and or peanut butter choc bits mixed into the batter.
