Digestive Biscuits
175 plain wholemeal flour
40 medium oatmeal
1 tsp baking powder
1/2 tsp salt
75g unsalted butter
brown sugar, 50g
3 tbs milk
Preheat the oven to 170 degrees celsius (fan-forced).
Mix all of the dry ingredients, except sugar, together.
Rub in the butter until the mixture resembles fine crumbs, stir in the sugar, and add the milk.
Stir well until the dough is firm but manageable.
Roll out fairly thinly on a floured surface and stamp out into 7.5 cm rounds.
Place on a greased baking sheet and bake in the oven for 17 -20 minutes or until light brown. Cool on a cooling rack.
