(Healthier) Truffles
You can’t go wrong with these. The recipe is fast and simple and they taste great. A brilliant pick me up for your busy teen.

Hacks: Spray the spoon you use to spoon our the cashew butter and honey with olive oil and these substances will slide off the spoon.
10 medjool dates, about 200g, pitted
1/2 cup cacao
4 tbs cashew butter (16gram per tbs)
1 tbs honey
1 tsp vanilla extract
pinch of salt
desiccated coconut
Place all ingredients excluding coconut in food processor and process for 2-3 minutes until combined. The mixture will look like moist crumbs. These crumbs will combine into balls when rolled into balls.
Roll tsp of mixture (using wet hands) into a ball.
Continue with the remaining mixture.
Roll in desiccated coconut.
Eat as they are or freeze until firm.
This works as a school snack.
